Chef's Secrets

Crispy Hot Beef
Ingredients:
8 tbsp. oil
3 red hot peppers
1 lb. beef (round steak)
8 oz. celery (about 2 cup)
1 carrot (about 2/3 cup)
4 tbsp. soy sauce (to marinate beef)
1/2 tbsp. brown peppercorn/powder
1 tsp. salt, sesame oil, wine, sugar, ginger juice

Directions:
1. After shredding the beef, put into a large bowl and marinate with soy sauce, wine, sugar and ginger juice for at least 30 minutes to 2 hours.
2. Remove the leaves and roots of the celery and cut into one inch long pieces (if the celery is long, cut the stalks into halves or fourths)
3. Peel the carrots, remove the seeds from the red peppers and slice them.
4. Heat 5 tbsp. oil in frying pan, stir-fry the beef for about 12 minutes (for the first 5 minutes fry over very high temperatures, reduce heat to half for 7 minutes and do not stop stirring). When the beef is very dark and dry, remove it and place into a bowl. (If you are in a rush, deep fry the beef in VERY HOT oil until beef is dark and dry for about 4 minutes)
5. With another 3 tbsp. oil, fry the red peppers, then add carrots, after half a minute add the celery and salt. Add the beef and stir until mixed. Sprinkle on the brown peppercorn powder and sesame oil before serving.
Note: Hot sauce or hot oil may be added to this.
